Method
 

Preparation
  1. In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, and cheddar cheese. Add hot sauce and Cajun seasoning to taste, then mix everything together until well blended.
  2. Take an egg roll wrapper and place it on a clean surface in a diamond shape. Spoon about 2 tablespoons of the filling into the bottom corner closest to you. Fold the corner over the filling, tuck in the sides, and roll up tightly.
  3. In a deep skillet, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). When the oil shimmers, it's ready for frying.
  4. Carefully add the egg rolls to the hot oil in batches. Fry for 3–4 minutes, turning occasionally until they are golden brown and crispy. Use a slotted spoon to remove the rolls from the oil and let them drain on paper towels.
  5. Transfer your perfectly fried Voodoo Egg Rolls to a serving platter. Consider pairing them with ranch dressing, remoulade, or a blue cheese dip for extra flavor.
