Preparation Steps
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the all-purpose flour and powdered sugar, then add cold, cubed butter. Mix until it resembles coarse crumbs.
- Press this mixture into a 9-inch tart pan, ensuring an even layer. Blind bake for 15-20 minutes, or until light golden brown. Set aside to cool completely.
- In a heatproof bowl, whisk together the large eggs, granulated sugar, fresh grapefruit juice, and zest until smooth. Place the bowl over simmering water and stir continuously for 10-15 minutes, or until thickened.
- Pour the prepared grapefruit curd into the cooled crust, smooth the top, and eliminate air bubbles.
- Cover with plastic wrap and refrigerate for at least 2 hours to let the curd set completely.
- Remove from the refrigerator, slice, garnish with grapefruit slices and zest, and serve with whipped cream if desired.
