Preparation Steps

  3. Press this mixture into a 9-inch tart pan, ensuring an even layer. Blind bake for 15-20 minutes, or until light golden brown. Set aside to cool completely.
  4. In a heatproof bowl, whisk together the large eggs, granulated sugar, fresh grapefruit juice, and zest until smooth. Place the bowl over simmering water and stir continuously for 10-15 minutes, or until thickened.
  5. Pour the prepared grapefruit curd into the cooled crust, smooth the top, and eliminate air bubbles.
  6. Cover with plastic wrap and refrigerate for at least 2 hours to let the curd set completely.
