Method
 

Step-by-Step Instructions
  1. Trim excess fat from the boneless chicken breasts, rinse under cold water, and pat dry.
  2. In a mixing bowl, combine soy sauce, minced garlic, and brown sugar. Add chicken and marinate for at least 30 minutes.
  3. Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-7 minutes on each side until golden-brown.
  4. In the same skillet, lower heat and combine peanut butter, lime juice, and reserved marinade. Stir until it forms a silky sauce.
  5. Return cooked chicken to the skillet, pour peanut sauce over it, and cook for a couple more minutes to absorb flavors.
  6. Serve by plating chicken and drizzling with remaining sauce. Garnish with crushed peanuts and cilantro.
