  • 1 cup Mozzarella Cheese Provolone or feta can be used as variations.
  • 1 cup Mango Can substitute with peach or pineapple.
  • 1 small Red Onion Soak slices in cold water to mellow flavor.
  • 1/4 cup Fresh Mint To garnish; vary according to personal preference.
  • 1/4 cup Fresh Cilantro To garnish; vary according to personal preference.

Method
 

Preparation
  1. In a mixing bowl, combine plain yogurt, minced garlic, grated ginger, lemon juice, hot paprika, cumin, garam masala, and cayenne pepper. Whisk until smooth.
  2. Coat chicken thighs evenly with half of the marinade and marinate for at least 30 minutes.
  3. Combine remaining marinade with tomato paste to create a pizza sauce.
  4. Preheat grill or skillet to medium-high heat. Cook marinated chicken for 6-7 minutes on each side until cooked through.
  5. Spread pizza sauce over naan, then layer grilled chicken, sliced mango, red onion, and mozzarella cheese.
  6. Return pizzas to grill or skillet. Cook for 5-7 minutes until cheese has melted and naan is golden brown.
  7. Garnish with fresh mint and cilantro before serving.
