Cooking Steps
- Season the Chicken by lightly seasoning with salt and pepper, place in the slow cooker.
- Prepare the Sauce by whisking together pineapple juice, soy sauce, brown sugar, garlic, and ginger.
- Add the Extras by scattering pineapple chunks and red bell pepper on top of the chicken.
- Slow Cook the Chicken on low for 5 to 6 hours or high for 3 to 4 hours.
- Thicken the Sauce by whisking cornstarch and water, adding to the sauce, and cooking on high for 15 minutes.
- Combine and Rest by returning the shredded chicken to the slow cooker, coating it in the thickened sauce.
- Serve and Garnish over rice, adding green onions and sesame seeds if desired.
