For the Chicken
  • 2 pounds Chicken thighs Recommended for juiciness
For the Sauce
  • 1 cup Pineapple juice Fresh or canned
  • 1/2 cup Soy sauce Low-sodium recommended
  • 1/4 cup Brown sugar For sweetness
  • 3 cloves Garlic Minced
  • 1 teaspoon Ground ginger Optional
For the Add-Ins
  • 1 cup Pineapple chunks Reserve some for garnish
  • 1 medium Red bell pepper Thinly sliced
For Thickening
  • 2 tablespoons Cornstarch
  • 1/4 cup Water
To Serve
  • 4 cups Rice Fluffy, to soak up sauce
  • 1/4 cup Green onions Sliced, optional garnish
  • 2 tablespoons Sesame seeds Optional garnish

Method
 

Cooking Steps
  1. Season the Chicken by lightly seasoning with salt and pepper, place in the slow cooker.
  2. Prepare the Sauce by whisking together pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  3. Add the Extras by scattering pineapple chunks and red bell pepper on top of the chicken.
  4. Slow Cook the Chicken on low for 5 to 6 hours or high for 3 to 4 hours.
  5. Thicken the Sauce by whisking cornstarch and water, adding to the sauce, and cooking on high for 15 minutes.
  6. Combine and Rest by returning the shredded chicken to the slow cooker, coating it in the thickened sauce.
  7. Serve and Garnish over rice, adding green onions and sesame seeds if desired.
