Step-by-Step Instructions
  1. In a large mixing bowl, combine fresh sweet corn kernels, all-purpose flour, large egg, milk, baking powder, salt, black pepper, cayenne, chopped green onions, and grated cheddar cheese. Stir gently until just combined.
  2. Heat about 1/4 inch of canola or vegetable oil in a skillet over medium heat until shimmering. Drop about 2-3 tablespoons of the fritter batter into the hot oil. Fry for 3-4 minutes on each side until golden brown and crispy.
  3. In the same skillet, reduce the heat slightly and crack in eggs, cooking to your desired doneness for about 3-4 minutes.
  4. To create each sandwich, start with one crispy corn fritter, add a cooked egg, optional bacon or sausage, sliced avocado, and arugula. Top with another fritter.
  5. Serve immediately while the fritters are still warm and crispy. Optionally drizzle with hot sauce.
