- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt.
- In a large bowl, cream together ½ cup of unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Add 2 large eggs, one at a time, mixing well. Stir in 1 teaspoon of vanilla extract and ½ teaspoon of almond extract.
- Gradually fold the dry mixture into the wet mixture until a thick dough forms.
- Divide the dough and tint with gel food coloring. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Roll tablespoon-sized balls of dough in powdered sugar until completely coated and place on the baking sheet.
- Bake for 10–12 minutes, until edges are set and tops crackle. Allow to cool on the baking sheet briefly before transferring to a wire rack.
