- In a mixing bowl, combine 1 cup of cottage cheese, 2 tablespoons of olive oil, and 1 beaten egg. Blend until smooth.
- In a separate bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt until well mixed.
- Gradually pour the dry mixture into the wet ingredients, stirring gently until just combined. Allow the dough to rest.
- Gently fold in 1 cup of finely chopped baby spinach and 1/2 cup of shredded mozzarella cheese.
- Lightly flour a surface, turn out the dough, and divide into equal portions to shape into bagel-like forms.
- Preheat your oven to 400°F (200°C) and bake the flagels for approximately 15 minutes until golden brown.
- Once baked, remove the flagels and transfer to a wire rack to cool for about 5 minutes.
