- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the cooked chicken, drained artichoke hearts, and frozen spinach.
- Add mayonnaise, sour cream, 3/4 cup mozzarella, 3/4 cup parmesan, garlic powder, onion powder, black pepper, and salt. Mix well.
- Grease a 9x13-inch baking dish with olive oil. Pour the mixture into the dish and spread evenly.
- In another bowl, combine breadcrumbs with melted butter. Sprinkle this mixture over the casserole.
- Top with remaining mozzarella and parmesan cheese.
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake for an additional 10-15 minutes until golden and bubbly.
- Allow to cool for 5-10 minutes before serving.
