Preparation Steps
- Preheat your oven to 400°F (200°C). Grease an 8x8-inch baking dish with cooking oil or non-stick spray.
- In a medium bowl, combine cooked sushi rice, rice vinegar, sugar, and salt. Mix thoroughly and transfer to the greased baking dish, pressing down evenly.
- In a large bowl, flake the skinless salmon and add mayonnaise, Sriracha, soy sauce, and sesame oil. Mix well until combined.
- Spread the salmon mixture evenly over the rice layer in the baking dish. Sprinkle a generous layer of shredded mozzarella cheese on top.
- Bake in the preheated oven for 18-20 minutes, until the cheese is melted and bubbling, with a golden-brown color.
- Allow to cool for a few minutes before garnishing with chopped green onions and toasted sesame seeds.
