Preparation Steps
  1. Preheat your oven to 400°F (200°C). Grease an 8x8-inch baking dish with cooking oil or non-stick spray.
  2. In a medium bowl, combine cooked sushi rice, rice vinegar, sugar, and salt. Mix thoroughly and transfer to the greased baking dish, pressing down evenly.
  3. In a large bowl, flake the skinless salmon and add mayonnaise, Sriracha, soy sauce, and sesame oil. Mix well until combined.
  4. Spread the salmon mixture evenly over the rice layer in the baking dish. Sprinkle a generous layer of shredded mozzarella cheese on top.
  5. Bake in the preheated oven for 18-20 minutes, until the cheese is melted and bubbling, with a golden-brown color.
  6. Allow to cool for a few minutes before garnishing with chopped green onions and toasted sesame seeds.
