Step-by-Step Instructions for Sourdough Pesto Grilled Cheese
  1. Preheat a non-stick skillet over medium-low heat for 3-5 minutes.
  2. Spread a thin layer of butter on one side of each slice of sourdough bread.
  3. Place the bread slices in the hot pan, buttered side down, and layer 3-4 slices of mozzarella over one slice.
  4. Add a tablespoon of basil pesto over the cheese, and any optional ingredients.
  5. Add another layer of mozzarella and top with the second slice of bread, buttered side out.
  6. Cook for about 3-4 minutes until the bottom slice is golden brown and crispy.
  7. Flip the sandwich and cook for another 3-4 minutes until golden brown all over.
  8. Remove from the pan, let cool for a minute, then slice and serve.
