- Season the chicken breasts generously with salt and pepper on both sides.
- In a skillet over medium heat, pour in olive oil and sauté minced garlic for 1-2 minutes until fragrant.
- Place seasoned chicken in the slow cooker, top with sautéed garlic, balsamic vinegar, and fig jam.
- Sprinkle fresh thyme leaves over the chicken and sauce mixture in the slow cooker.
- Cover and cook on low for 4-6 hours until chicken is tender (165°F internal temperature).
- About 15 minutes before serving, add crumbled goat cheese on top of the chicken.
- Once done, serve the chicken with the fig sauce drizzled over and garnish with thyme.
