Instructions
  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. In a skillet over medium heat, pour in olive oil and sauté minced garlic for 1-2 minutes until fragrant.
  3. Place seasoned chicken in the slow cooker, top with sautéed garlic, balsamic vinegar, and fig jam.
  4. Sprinkle fresh thyme leaves over the chicken and sauce mixture in the slow cooker.
  5. Cover and cook on low for 4-6 hours until chicken is tender (165°F internal temperature).
  6. About 15 minutes before serving, add crumbled goat cheese on top of the chicken.
  7. Once done, serve the chicken with the fig sauce drizzled over and garnish with thyme.
