  • salt to taste
  • 2 teaspoons seasoned rice vinegar optional
For the Filling
  • 0.5 pound salmon can substitute with shrimp, chicken, crab, or scallops
  • 1 tablespoon coconut aminos or soy sauce/tamari for a traditional flavor
  • 1 tablespoon spicy mayo can substitute with regular mayo
For the Nori Cups
  • 2 sheets nori cut into squares
For Garnish
  • chopped fresh chives for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Rinse ½ cup of rice under cold water and cook according to package instructions.
  3. Prepare ½ pound of salmon, cut into small cubes and mix with coconut aminos and spicy mayo.
  4. Cut 2 sheets of nori into squares for muffin tin use.
  5. Place warm rice in each nori square and mold into cup shapes.
  6. Fill nori cups with the salmon mixture.
  7. Bake in the oven for approximately 15 minutes until nori is crisp.
  8. Broil for the last 60 seconds to enhance crispiness.
  9. Let cool slightly, garnish with spicy mayo and chives, and serve.
