- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Combine chopped pistachios, a drizzle of honey, freshly chopped rosemary, sea salt, and cracked black pepper in a bowl. Mix until evenly coated.
- Roll out the chilled puff pastry to about 1/8 inch thick and cut into 3-inch squares.
- Place a square of puff pastry, center a piece of Brie on top, and spoon the pistachio mixture directly onto the Brie. Fold the pastry corners over and seal tightly.
- Beat the egg and apply the egg wash over each assembled bite using a pastry brush.
- Bake for 15–20 minutes or until the pastry is golden brown and the Brie starts to ooze.
- Garnish with fresh cranberries or pomegranate seeds after baking.
