Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine chopped pistachios, a drizzle of honey, freshly chopped rosemary, sea salt, and cracked black pepper in a bowl. Mix until evenly coated.
  3. Roll out the chilled puff pastry to about 1/8 inch thick and cut into 3-inch squares.
  4. Place a square of puff pastry, center a piece of Brie on top, and spoon the pistachio mixture directly onto the Brie. Fold the pastry corners over and seal tightly.
  5. Beat the egg and apply the egg wash over each assembled bite using a pastry brush.
  6. Bake for 15–20 minutes or until the pastry is golden brown and the Brie starts to ooze.
  7. Garnish with fresh cranberries or pomegranate seeds after baking.
