Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Grease or line a 9x9-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, and ketchup with garlic powder, onion powder, salt, and black pepper. Mix gently.
  3. Transfer the mixture into the prepared baking dish, spreading evenly, and press down gently.
  4. Bake in the preheated oven for 20 to 25 minutes until the internal temperature reaches 160°F (70°C).
  5. Prepare the mashed potatoes while the meatloaf is baking by mixing them with sour cream and butter until creamy.
  6. Spread the mashed potatoes evenly over the baked meatloaf.
  7. Sprinkle shredded cheddar cheese over the mashed potatoes and bake for an additional 10 to 15 minutes until cheese is bubbly.
  8. Allow to cool for 5 to 10 minutes before serving. Optionally garnish with fresh parsley.
