Preparation Steps
- Preheat your oven to 375°F (190°C). Grease or line a 9x9-inch baking dish with parchment paper.
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, and ketchup with garlic powder, onion powder, salt, and black pepper. Mix gently.
- Transfer the mixture into the prepared baking dish, spreading evenly, and press down gently.
- Bake in the preheated oven for 20 to 25 minutes until the internal temperature reaches 160°F (70°C).
- Prepare the mashed potatoes while the meatloaf is baking by mixing them with sour cream and butter until creamy.
- Spread the mashed potatoes evenly over the baked meatloaf.
- Sprinkle shredded cheddar cheese over the mashed potatoes and bake for an additional 10 to 15 minutes until cheese is bubbly.
- Allow to cool for 5 to 10 minutes before serving. Optionally garnish with fresh parsley.
