Step-by-Step Instructions
  1. Preheat oven to 425°F (220°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  2. Remove baked sweet potatoes and let cool. Slice each open, scoop out flesh and mash with olive oil and cumin.
  3. Heat a skillet over medium heat, add olive oil, and sauté minced garlic until fragrant.
  4. Add ground turkey to the skillet and cook until browned, then stir in spices, diced tomatoes, black beans, corn, zucchini, and spinach.
  5. Scoop the turkey mixture into each sweet potato skin, packing it full.
  6. Sprinkle shredded cheese on top and broil for 6-8 minutes until cheese is bubbly and golden.
  7. Remove from oven and add desired toppings like green onions, salsa, or Greek yogurt.
