Ingredients
  

For the Beef Filling
  • 3 lbs Boneless Chuck Roast or beef shoulder
  • 2 tbsp Avocado Oil or neutral oil
  • 1 tbsp Coarse Ground Salt
  • 1 tsp Fresh Ground Pepper
  • 4 pcs Dried Guajillo Chiles or New Mexico peppers
  • 5-6 pcs Chipotle Chilis in Adobo
  • 1 pcs Red Onion thinly sliced
  • 8 cloves Garlic smashed
  • 32 oz Beef Stock
  • 1 tbsp Tomato Paste
  • 14.5 oz Fire Roasted Diced Tomatoes
  • 1/4 cup Apple Cider Vinegar or lime juice
  • 1 tbsp Ground Cumin
  • 1 tbsp Dried Oregano
  • 1 pcs Cinnamon Stick omit if preferred
  • 3 pcs Dry Bay Leaves
  • 1 tsp Smoked Paprika or regular paprika
  • 1/2 tbsp Fresh Grated Ginger or powdered ginger
  • 1 tsp Ground Coriander omit if preferred
For the Tacos and Garnish
  • 8 pcs Corn or Flour Tortillas
  • 2 pcs Lime Wedges
  • 1 cup Fresh Cilantro Leaves
  • 1 cup Diced Onion
  • 1 cup Shredded Oaxacan Cheese or Italian cheese

Method
 

Step-by-Step Instructions
  1. Sear Beef: Heat a cast iron skillet over high heat and add avocado oil. Season the chuck roast with salt and pepper, then sear for 5-6 minutes on each side.
  2. Cook in Crockpot: Transfer the beef to the crockpot. Layer in red onion, garlic, and guajillo chiles. Pour in beef stock, tomato paste, fire-roasted tomatoes, apple cider vinegar, and spices. Stir and cook on low for 8 hours.
  3. Shred Beef: Remove the beef from the crockpot and shred it on a baking sheet using forks.
  4. Blend Sauce: Remove bay leaves and cinnamon stick. Blend the remaining sauce until smooth.
  5. Combine Beef and Sauce: Mix 1.5 to 2 cups of the sauce with the shredded beef.
  6. Prepare Tacos: Dip tortillas in warm consome, fill with beef mixture, onion, cilantro, and cheese. Fold and fry in a skillet until crispy.
