- Sear Beef: Heat a cast iron skillet over high heat and add avocado oil. Season the chuck roast with salt and pepper, then sear for 5-6 minutes on each side.
- Cook in Crockpot: Transfer the beef to the crockpot. Layer in red onion, garlic, and guajillo chiles. Pour in beef stock, tomato paste, fire-roasted tomatoes, apple cider vinegar, and spices. Stir and cook on low for 8 hours.
- Shred Beef: Remove the beef from the crockpot and shred it on a baking sheet using forks.
- Blend Sauce: Remove bay leaves and cinnamon stick. Blend the remaining sauce until smooth.
- Combine Beef and Sauce: Mix 1.5 to 2 cups of the sauce with the shredded beef.
- Prepare Tacos: Dip tortillas in warm consome, fill with beef mixture, onion, cilantro, and cheese. Fold and fry in a skillet until crispy.
