Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) to toast the bolillo rolls.
  2. Slice the bolillo rolls in half and optionally spread with butter or olive oil.
  3. Toast the rolls cut-side up for 5-7 minutes until lightly golden.
  4. In a mixing bowl, combine shredded chicken, avocado, tomato, jalapeños, and lime juice.
  5. Layer the filling onto the bottom half of each bolillo roll and press the top half down.
  6. Return to the oven for an additional 5 minutes for extra crunch, if desired.
  7. Let the sandwiches cool for a minute, then cut in half and serve.
