- Preheat your oven to 425°F (220°C). If using frozen fries, cook according to package instructions, about 20–25 minutes. For homemade fries, cut potatoes, toss with olive oil, salt, and pepper, and bake for 30-35 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken fillets with salt and pepper, then cook for 6-7 minutes on each side until golden brown and internal temperature registers 165°F (74°C). Remove and keep warm.
- In the same skillet, reduce heat and add minced garlic. Sauté for 1 minute until fragrant. Pour in 1 cup of heavy cream and bring to a simmer. Slowly add in ½ cup of freshly grated Parmesan cheese and a pinch of red pepper flakes, cooking for 2-3 minutes until thickened. Adjust seasoning.
- Return the chicken to the skillet, coating it in the creamy garlic-Parmesan sauce. Let simmer for an additional 2-3 minutes to meld flavors.
- Plate the chicken fillets alongside the crispy fries. Drizzle the sauce generously over the chicken and garnish with chopped parsley.
