Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken quarters dry and place them skin-side up in a cast iron or roasting pan. Ensure they are spaced out.
  3. In a mixing bowl, whisk together honey, chopped thyme, olive oil, balsamic vinegar, shallot, salt, and pepper. Set aside some marinade for later.
  4. Add the blueberries and pearl onions to the remaining marinade and toss gently.
  5. Coat the chicken generously with the reserved marinade, then pour the blueberry-onion mixture around the chicken.
  6. Roast in the oven for 45 minutes until the skin is crispy and golden.
  7. Increase the oven temperature to 425°F (220°C) and add the Malbec wine around the chicken. Roast for an additional 5-10 minutes until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 10 minutes before serving to redistribute juices.
