Preparation Steps
- Preheat your oven to 400°F (200°C).
- Pat the chicken quarters dry and place them skin-side up in a cast iron or roasting pan. Ensure they are spaced out.
- In a mixing bowl, whisk together honey, chopped thyme, olive oil, balsamic vinegar, shallot, salt, and pepper. Set aside some marinade for later.
- Add the blueberries and pearl onions to the remaining marinade and toss gently.
- Coat the chicken generously with the reserved marinade, then pour the blueberry-onion mixture around the chicken.
- Roast in the oven for 45 minutes until the skin is crispy and golden.
- Increase the oven temperature to 425°F (220°C) and add the Malbec wine around the chicken. Roast for an additional 5-10 minutes until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before serving to redistribute juices.

Notes
Pat chicken dry before seasoning for maximum crispiness. Reserve some marinade for a delicious glaze and check internal temperature during cooking.
