Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground pork, scallions, garlic, ginger, and jerk seasoning. Mix gently until just combined and form into meatballs.
  2. Heat a tablespoon of oil in a skillet over medium heat. Brown the meatballs for about 4-5 minutes until golden brown and cooked through. Set aside.
  3. In the same skillet, reduce heat to low and pour in the coconut milk, stirring to combine. Add curry powder and let simmer for 2-3 minutes.
  4. Return the meatballs to the skillet, cover, and let simmer over low heat for 15-20 minutes, stirring occasionally until fully cooked.
  5. Serve hot over jasmine rice or with roasted vegetables, garnished with scallions or herbs if desired.
