Ingredients

  • 1/4 cup unsweetened cocoa powder

  • 1 3/4 cups buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon milk for cream cheese mixture
  • Cooking spray or additional oil for the waffle iron

Method
 

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, mix the cocoa powder with 1/2 cup of the flour mixture. Set aside.
  3. In another bowl, beat the eggs, then add the buttermilk, vegetable oil, vanilla extract, and red food coloring. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Divide the batter into two bowls. Stir the cocoa powder mixture into one bowl, creating a chocolate batter.
  6. Preheat your waffle iron and lightly grease it with cooking spray or oil.
  7. Pour a scoop of the red batter into the center of the waffle iron, followed by a scoop of the chocolate batter. Use a knife or skewer to swirl the two batters together slightly.
  8. Close the waffle iron and cook according to the manufacturer's instructions, usually about 4-5 minutes, until golden brown.
  9. While the waffles are cooking, prepare the cream cheese topping by mixing the softened cream cheese, powdered sugar, and milk until smooth.
  10. Serve the waffles warm, drizzled with the cream cheese mixture.
