Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Generously season pork tenderloin with salt and pepper.
  3. Heat olive oil in a skillet and sear the pork for 3-4 minutes on each side.
  4. Remove pork and sauté garlic and shallots in the skillet for 2-3 minutes.
  5. Add chicken broth and simmer for 1-2 minutes.
  6. Stir in heavy cream, Dijon mustard, and thyme. Cook until slightly thickened.
  7. Return pork to skillet, coat with sauce, and bake in the oven for 20-25 minutes.
  8. Let pork rest for 5 minutes before slicing and serving with sauce.
