Step‑by‑Step Instructions
  1. Cream the unsalted butter with granulated and powdered sugars until light and fluffy.
  2. Add vanilla and almond extracts, mixing until combined.
  3. Whisk together flour, baking powder, and salt in a separate bowl.
  4. Finely grind the pistachios in a food processor.
  5. Gradually add dry ingredients to the wet mixture, folding in ground pistachios.
  6. Chill the cookie dough wrapped in plastic wrap in the refrigerator for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
