Preparation Steps
- Step 1: Finely drain the crushed pineapple in a sieve or colander for at least 10 minutes.
- Step 2: In a medium mixing bowl, combine the well-drained pineapple, softened cream cheese, powdered sugar, and optional lime juice.
- Step 3: Shape about one tablespoon of the mixture into a ball, and repeat until all mixture is formed.
- Step 4: Roll the balls in shredded coconut and chopped pecans until completely coated.
- Step 5: Transfer the coated balls into an airtight container and refrigerate for at least 1 hour.
