- Preheat your oven to 425°F (220°C).
- Mix together the olive oil, ground cumin, paprika, garlic powder, salt, black pepper, and lime juice until a smooth paste forms.
- Pat the whole chicken dry with paper towels and rub the spice paste thoroughly all over the chicken.
- Place the seasoned chicken in the roasting pan and roast for about 1 to 1 ½ hours until the skin is golden and an instant-read thermometer reads 165°F (75°C).
- Prepare the creamy green sauce by blending together mayonnaise, sour cream, jalapeño, cilantro, lime juice, olive oil, garlic, salt, and pepper until smooth.
- Remove the chicken from the oven and let it rest on a cutting board for about 10 minutes.
- Carve the chicken into pieces and serve alongside the creamy green sauce.
