For the Creamy Green Sauce
  • 1/2 cup mayonnaise Greek yogurt is a healthier alternative.
  • 1/4 cup sour cream Greek yogurt can work as a substitute.
  • 1 jalapeño seeds removed Replace with a milder chili if preferred.
  • 1 cup fresh cilantro leaves Parsley can be swapped for a milder taste.
  • 2 tablespoons lime juice Lemon juice can be used if lime isn’t available.
  • 2 tablespoons olive oil Avocado oil can be a substitute.
  • 3 cloves garlic Adjust based on your preference.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Directions
  1. Preheat your oven to 425°F (220°C).
  2. Mix together the olive oil, ground cumin, paprika, garlic powder, salt, black pepper, and lime juice until a smooth paste forms.
  3. Pat the whole chicken dry with paper towels and rub the spice paste thoroughly all over the chicken.
  4. Place the seasoned chicken in the roasting pan and roast for about 1 to 1 ½ hours until the skin is golden and an instant-read thermometer reads 165°F (75°C).
  5. Prepare the creamy green sauce by blending together mayonnaise, sour cream, jalapeño, cilantro, lime juice, olive oil, garlic, salt, and pepper until smooth.
  6. Remove the chicken from the oven and let it rest on a cutting board for about 10 minutes.
  7. Carve the chicken into pieces and serve alongside the creamy green sauce.
