  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. Blend together ½ cup unsalted butter, ½ cup granulated sugar, and ½ cup light brown sugar until fluffy (2-3 minutes). Incorporate 1 cup creamy peanut butter, 1 large egg, and 1 teaspoon vanilla extract.
