Step-by-Step Instructions
  1. Preheat your oven to 350°F (176°C) and butter a 9-inch pie plate. Spread cranberries, sprinkle sugar and pecans or almonds over them.
  2. In a bowl, cream together unsalted butter and granulated sugar until smooth and light, about 2-3 minutes.
  3. Add the almond or vanilla extract and eggs one by one, beat until fluffy.
  4. Lower mixer speed and gradually beat in the flour and salt until just blended.
  5. Spread the batter evenly over the cranberry mixture in the pie plate.
  6. Bake for 45-50 minutes until a toothpick inserted in the center comes out clean.
  7. Allow the pie to cool for 10-15 minutes before slicing and serving, best with vanilla ice cream or whipped cream.
