- Preheat your oven to 350°F (176°C) and butter a 9-inch pie plate. Spread cranberries, sprinkle sugar and pecans or almonds over them.
- In a bowl, cream together unsalted butter and granulated sugar until smooth and light, about 2-3 minutes.
- Add the almond or vanilla extract and eggs one by one, beat until fluffy.
- Lower mixer speed and gradually beat in the flour and salt until just blended.
- Spread the batter evenly over the cranberry mixture in the pie plate.
- Bake for 45-50 minutes until a toothpick inserted in the center comes out clean.
- Allow the pie to cool for 10-15 minutes before slicing and serving, best with vanilla ice cream or whipped cream.
