  • 1 cup buttermilk or yogurt substitute with non-dairy milk and 1 tbsp lemon juice or vinegar for dairy-free
  • 1/2 cup melted butter or non-dairy butter for vegan option

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare muffin pan.
  2. Whisk together flour, baking powder, baking soda, salt, stollen spice, sugar, and dried fruits in a bowl.
  3. In another bowl, whisk together egg, buttermilk or yogurt, and melted butter until creamy.
  4. Gently fold wet ingredients into dry ingredients until just combined.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 20 minutes or until tops are golden and a toothpick comes out clean.
  7. Cool muffins for 5 minutes, then transfer to wire rack and brush tops with melted butter.
