Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and spray two 12-cup muffin tins with non-stick cooking spray.
  2. In a medium mixing bowl, combine all-purpose flour and brown sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Press the crumb mixture evenly into the bottom of each muffin cup and bake for 8-10 minutes until golden.
  4. Whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt in a separate bowl.
  5. Stir in chopped pecans until well coated.
  6. Spoon the pecan filling mixture evenly over each baked crust.
  7. Reduce oven temperature to 275°F (135°C) and bake for an additional 30 minutes.
  8. Remove from oven and let cool in the tins for about 10-15 minutes before transferring to a wire rack to cool completely.
