- Preheat your oven to 350°F (175°C) and spray two 12-cup muffin tins with non-stick cooking spray.
- In a medium mixing bowl, combine all-purpose flour and brown sugar. Cut in cold butter until the mixture resembles coarse crumbs.
- Press the crumb mixture evenly into the bottom of each muffin cup and bake for 8-10 minutes until golden.
- Whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt in a separate bowl.
- Stir in chopped pecans until well coated.
- Spoon the pecan filling mixture evenly over each baked crust.
- Reduce oven temperature to 275°F (135°C) and bake for an additional 30 minutes.
- Remove from oven and let cool in the tins for about 10-15 minutes before transferring to a wire rack to cool completely.
