  • 2 Tbsp Granulated Sugar

  • 8 oz Cream Cheese softened
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/2 cup Heavy Cream
For the Topping
  • 2 Tbsp Granulated Sugar for caramelized topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Prepare a muffin tin with cupcake liners.
  2. Combine graham cracker crumbs, melted butter, and sugar. Press firmly into muffin cups and bake for 5 minutes.
  3. Beat softened cream cheese until smooth. Gradually add granulated sugar, then add eggs one at a time, followed by vanilla extract and heavy cream until smooth.
  4. Spoon filling into crusts, filling about ¾ full. Bake for 18 to 20 minutes until edges are set but center jiggles.
  5. Cool for 30 minutes, then chill in the refrigerator for at least 2 hours or overnight.
  6. Sprinkle granulated sugar on top and caramelize with a kitchen torch or broil briefly.
  7. Remove from muffin tin and serve with fresh berries or dessert wine.
