Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/4 cup honey
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon optional
  • 1/4 cup chopped nuts or dried fruit optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, baking powder, salt, and cinnamon (if using). Mix well.
  3. In another bowl, cream together the softened butter and honey until light and fluffy.
  4. Add the milk and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in the chopped nuts or dried fruit.
  6. Turn the dough out onto a floured surface and knead gently for about 1 minute until smooth.
  7. Roll the dough into a rectangle about 1/2 inch thick. Cut into squares or rectangles, about 3 inches by 3 inches.
  8. Place the pieces on the prepared baking sheet and bake for 15-20 minutes, or until lightly golden.
  9. Allow to cool slightly before serving.
