Ingredients

  • 1 piece Prime Rib Roast Choose 'Prime' or 'Choice' grade for flavor
  • 30 g Kosher Salt Apply 24 hours prior to roasting for best results
  • 3 tbsp Olive Oil For browning bones when making au jus
For the Au Jus
  • 3 lbs Beef Bones Neck or oxtail bones can be substituted
  • 5 cloves Garlic
  • 2 large Carrots
  • 3 ribs Celery
  • 1 large Onion
  • 1/2 cup Dry Red Wine Beef stock is a non-alcoholic alternative
  • 6 cups Low-Sodium Beef Stock Homemade stock is preferred
  • 2 sprigs Thyme Fresh recommended
  • 1 leaf Bay Leaf
For the Horseradish Sauce
  • 1 cup Sour Cream Creamy base for the sauce
  • 5 tbsp Horseradish Adjust to taste
  • 1 tbsp Dijon Mustard Can substitute with yellow mustard
  • 2 tsp Worcestershire Sauce Adds flavor punch
  • 2 tbsp Mayonnaise Can use Greek yogurt for lighter option

Method
 

Preparation
  1. Start by generously seasoning your Classic Christmas Prime Rib with kosher salt at least 24 hours in advance.
  2. Let the roast rest at room temperature for 5-6 hours before cooking.
Cooking
  1. Preheat your oven to 250°F (120°C).
  2. Heat olive oil in a large pot, brown the beef bones, and add vegetables to sauté.
  3. Deglaze with red wine and add low-sodium beef stock and herbs; simmer.
  4. Cook prime rib in the oven until it reaches an internal temperature of 120°F (medium-rare).
  5. Remove from the oven, tent with foil, and let rest for 20-30 minutes.
  6. Broil the prime rib for 1-2 minutes per side for added crust.
  7. Mix sour cream, horseradish, mustard, Worcestershire sauce, and mayonnaise in a bowl to make horseradish sauce.
