Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil in a large cast-iron skillet over medium heat. Slice the sausage into rounds and sauté until browned, about 2-3 minutes on each side.
  2. Remove sausage, and in the same skillet, add 2 minced garlic cloves and sauté for about 30 seconds until fragrant.
  3. Stir in 1 cup of heavy cream, ½ cup of chicken broth, and 1 teaspoon of Italian seasoning. Simmer for about 5 minutes and add ¼ cup of grated Parmesan cheese.
  4. Toss in 2 cups of chopped spinach and ½ cup of sun-dried tomatoes, and simmer on low heat for 2-3 minutes.
  5. Return the sausage to the skillet, add 4 cups of zucchini noodles, and gently toss everything together for another 2-3 minutes.
  6. Remove from heat and serve hot, garnished with freshly chopped basil.
