- In a large bowl, season chicken thighs with salt, pepper, Dijon mustard, and paprika. Let marinate for 10 minutes.
- Heat a skillet over medium-high. Add butter and olive oil, then brown chicken thighs skin-side down for 5-7 minutes. Flip and brown the other side for another 4-5 minutes.
- Remove chicken and sauté minced shallots in the same skillet for 1-2 minutes until translucent.
