Step-by-Step Instructions for French Mustard Chicken
  1. In a large bowl, season chicken thighs with salt, pepper, Dijon mustard, and paprika. Let marinate for 10 minutes.
  2. Heat a skillet over medium-high. Add butter and olive oil, then brown chicken thighs skin-side down for 5-7 minutes. Flip and brown the other side for another 4-5 minutes.
  3. Remove chicken and sauté minced shallots in the same skillet for 1-2 minutes until translucent.
  4. Deglaze with white wine, scraping the bottom for flavor, and let simmer for 2-3 minutes.
  5. Add chicken stock, thyme, and bay leaves to the pan. Return browned chicken, cover, and simmer for 15-20 minutes.
  6. Remove chicken, reduce heat, and whisk in sour cream and grainy mustard. Adjust seasoning.
  7. Reintroduce chicken to the sauce for a couple of minutes of warming. Remove bay leaves and serve.
