Filling Preparation
- Preheat your oven to 375°F (190°C).
- Roll out your spelt flour dough and fit it into a 9-inch pie dish, crimping the edges.
- Whisk together the apple butter, eggs, heavy cream, cinnamon, and nutmeg until smooth.
Crust Baking
- Place parchment paper over the crust and fill it with pie weights or dried beans, then bake for 15 minutes.
- Remove parchment and weights, pour the filling into the pre-baked crust.
- Bake for 45–50 minutes until edges are puffy and center is slightly wobbly.
Cooling and Refrigeration
- Let the pie cool at room temperature for an hour before refrigerating for at least 6 hours.
