- Preheat your oven to 350°F (175°C) and line your baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs and sugar. Stir in melted butter until moistened, then press into pan. Bake for 8-10 minutes until golden.
- In a large mixing bowl, beat cream cheese with sugar until smooth. Mix in pumpkin puree, then eggs one at a time. Stir in vanilla and pumpkin spice until velvety.
- Pour cheesecake filling over baked crust and spread evenly. Bake for 25-30 minutes until edges are set and center slightly jiggles.
- Let cool at room temperature for 1 hour, then refrigerate for at least 3 hours or overnight. Lift the bars from the pan and slice into squares.
- Optional: Drizzle melted chocolate or sprinkle nuts on top for added texture before serving.
