Preparation
- In a medium bowl, whisk together mayonnaise, mustard, and maple syrup until smooth. Set aside.
- Heat a skillet over medium heat and cook bacon until crispy, about 4-5 minutes per side.
- In the same skillet, cook maple sausage over medium-high heat for 8-10 minutes, breaking it apart until browned.
- Whisk eggs with milk, salt, and pepper in a bowl. Cook in a clean skillet over medium-low heat till fluffy, about 3-4 minutes.
- Preheat oven to 350°F (175°C) and warm croissants for 3-4 minutes.
- Slice warm croissants in half and spread maple mustard sauce on both sides. Layer eggs, sausage, bacon, and cheese.
- Return sandwiches to the oven for 1-2 minutes to melt the cheese.
- Serve immediately, garnished with chives if desired.
