  • 2 large Eggs
  • 1/2 cup Milk unsweetened almond milk for dairy-free
  • 1 cup Breadcrumbs preferably Panko; can substitute almond flour
  • 2 cloves Garlic minced
  • 1/2 cup Ketchup low-sugar optional
  • 1/4 cup Fresh Parsley chopped
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tbsp Italian Seasoning
  • 2 tbsp Brown Sugar or a low-calorie sweetener
  • 1 tbsp Vinegar
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
For the Glaze
  • 1/2 cup Ketchup remaining from meatloaf
  • 1/4 cup Brown Sugar or a sugar alternative
  • 1 tbsp Vinegar
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan or line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, chopped onion, eggs, milk, breadcrumbs, minced garlic, a portion of ketchup, chopped parsley, Worcestershire sauce, salt, black pepper, and Italian seasoning. Mix gently until just blended.
  3. Transfer the blended mixture into the prepared loaf pan or shape it into a loaf on the lined baking sheet.
  4. In a separate bowl, combine the remaining ketchup, brown sugar, vinegar, garlic powder, and onion powder to create the glaze. Pour half over the meatloaf.
  5. Bake the meatloaf for about 45 minutes or until the internal temperature reaches 160°F (71°C).
  6. Spread the remaining glaze over the top and bake for an additional 15-30 minutes until fully cooked.
  7. Let the meatloaf rest for 10-15 minutes before slicing and serving.
