Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a greased 13x9-inch baking pan.
  2. Combine all-purpose flour and brown sugar in a bowl. Cut in cold, cubed butter until the mixture resembles coarse crumbs. Press into the baking pan and bake for 15–18 minutes until light golden brown.
  3. Beat together softened cream cheese, granulated sugar, and vanilla until smooth. Gradually add lightly beaten eggs, then spread over the baked crust.
  4. Toss finely chopped apples with cinnamon, nutmeg, and sugar, then layer over the cheesecake filling.
  5. Combine flour, brown sugar, and oats for the streusel topping. Cut in remaining cold butter until crumbly and sprinkle over the apples.
  6. Bake for 25–30 minutes until the cheesecake layer is set and top is lightly golden.
  7. Let cool at room temperature for about an hour, then refrigerate for at least two hours before serving.
