Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a small bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and spices: cinnamon, cardamom, ginger, nutmeg, cloves, and black pepper.
  3. In a medium bowl, mix together brown sugar, granulated sugar, and vegetable oil. Add eggs one at a time, then stir in applesauce and milk until smooth.
  4. Gently fold the dry mixture into the wet ingredients until just combined to form a thick batter.
  5. Pour the batter into the prepared pan and bake for 25–28 minutes until a toothpick comes out clean.
  6. While the cake cools, beat cream cheese and unsalted butter until smooth. Gradually add brown sugar, salt, and vanilla before mixing in powdered sugar.
  7. Allow the cake to cool completely before frosting it with the spiced cream cheese frosting.
  8. Let the frosted cake sit for about 30 minutes before slicing and serving.
