Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a small bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and spices: cinnamon, cardamom, ginger, nutmeg, cloves, and black pepper.
- In a medium bowl, mix together brown sugar, granulated sugar, and vegetable oil. Add eggs one at a time, then stir in applesauce and milk until smooth.
- Gently fold the dry mixture into the wet ingredients until just combined to form a thick batter.
- Pour the batter into the prepared pan and bake for 25–28 minutes until a toothpick comes out clean.
- While the cake cools, beat cream cheese and unsalted butter until smooth. Gradually add brown sugar, salt, and vanilla before mixing in powdered sugar.
- Allow the cake to cool completely before frosting it with the spiced cream cheese frosting.
- Let the frosted cake sit for about 30 minutes before slicing and serving.
