Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and coat a baking sheet with nonstick cooking spray.
  2. In a bowl, combine the all-purpose flour, baking powder, kosher salt, and ground cinnamon; whisk until no clumps remain.
  3. In another bowl, mix the melted butter and granulated sugar until smooth. Stir in the egg, vanilla extract, and applesauce.
  4. Fold the dry ingredients into the wet mixture gently, then incorporate the finely diced apples.
  5. Scoop portions of the batter onto the prepared baking sheet, spacing them a few inches apart.
  6. Bake for about 10 minutes, until lightly golden brown and puffed.
  7. Whisk together powdered sugar and apple cider for the glaze until smooth.
  8. Broil the baked fritter bites for 2-4 minutes until the glaze bubbles and caramelizes lightly.
