Brownies
- Preheat your oven to 350°F (175°C) and prepare an 8-inch baking pan with non-stick spray or parchment paper.
- In a microwave-safe bowl, melt the unsalted butter and let it cool slightly.
- Combine melted butter with granulated sugar, large eggs, and vanilla extract in a large mixing bowl. Whisk until smooth.
- Gradually mix in cocoa powder, all-purpose flour, salt, and baking powder until just combined.
- Pour the brownie batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick comes out with a few moist crumbs.
- Remove from the oven and let the brownies cool completely in the pan on a wire rack.
Frosting
- Dissolve the instant coffee granules in heavy whipping cream. Beat softened butter until light and fluffy.
- Gradually add powdered sugar while mixing until smooth, then add the cream mixture.
- Once brownies are cooled, spread the frosting over the top.
