- Preheat your oven to 180°C (350°F) or 200°C (390°F) for non-fan settings. Line a baking sheet with parchment paper.
- Drizzle honey over puff pastry sheets and spread evenly with a spatula. Lay the pastry on the prepared baking sheet.
- Sprinkle walnuts, crumbled blue cheese, grated Parmesan, and chopped thyme evenly over the pastry. Season with sea salt and cracked pepper.
- Roll each pastry sheet into a tight log and slice in half lengthwise. Tuck any toppings back into the rolls.
