- Preheat your oven to 400°F (200°C). Slice your crisp apples and toss them with cinnamon and nutmeg until evenly coated. Spread the apple slices on a baking sheet, arranging them in a single layer. Roast for about 15-20 minutes, or until they are tender and caramelized.
- In a skillet over medium heat, cook strips of bacon until crispy and golden, about 6-8 minutes. Place the bacon on a paper towel-lined plate to drain excess grease.
- Soften some butter in a bowl and mix in fresh herbs to create herb butter. Spread a generous layer on one side of each slice of hearty bread.
- On the unbuttered side of one slice of bread, layer the roasted apples, cheddar cheese, crispy bacon, and drizzle hot honey. Top with the second slice of bread, unbuttered side facing in.
- Heat a skillet over medium-low heat, add the sandwich buttered side down, and press gently. Grill for about 3-4 minutes, or until golden brown, then flip and grill for another 3-4 minutes.
- Once golden and cheese is melting, remove from the skillet. Let cool for a minute, then slice in half and serve immediately.
