- Gather all ingredients for the Honey Banana Grilled Cheese Sandwich. Slice the bread into even pieces, about half an inch thick. Peel and slice the banana into thin rounds. Set aside the mascarpone cheese to reach room temperature.
- Spread mascarpone cheese on one side of each slice of bread. Layer banana slices over the mascarpone and drizzle honey on top before placing the other slice of bread on top, cheese side down.
- Heat a non-stick skillet over medium heat and melt the butter. Place the assembled sandwich in the skillet, pressing down slightly. Grill for about 4 minutes until golden brown then flip and grill for another 4 minutes until the cheese melts and bread is crispy.
- Cut the sandwich in half diagonally and serve immediately while the cheese is still melty and the banana warm.
