Ingredients
  

For the Marinade
  • 1 lb Chicken Thighs can use chicken breasts
  • 1 tsp Salt preferably kosher
  • 1 cup Greek Yogurt can swap with plant-based yogurt
  • 1 tsp Paprika
  • 2 tsp Curry Powder
  • 1 tsp Garlic Powder or 1 clove of fresh garlic
For the Sauce
  • 2 tbsp Butter can combine with oil
  • 1 medium Onion chopped
  • 15 oz Tomato Sauce or canned crushed tomatoes
  • 1 tbsp Sugar consider brown sugar
  • 1 tsp Black Pepper fresh-ground is best
  • 1 cup Heavy Cream or coconut cream for dairy-free
  • 1 tbsp Garam Masala or mix cumin, coriander, cinnamon, cloves
  • 2 tbsp Parsley or Cilantro for garnish
  • 1/4 tsp Cayenne Pepper optional, adjust to taste

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine chicken thighs with salt, garlic powder, paprika, curry powder, and Greek yogurt. Toss until coated and marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat. Add half of the butter and a drizzle of oil. Add marinated chicken and sear for 4-5 minutes on each side until golden, then remove from skillet.
  3. In the same skillet, add more butter if needed and sauté chopped onion until translucent (about 3-4 minutes). Stir in minced garlic for 1 minute, then add tomato sauce, sugar, salt, black pepper, curry powder, and optional cayenne. Simmer gently.
  4. Lower the heat and stir in the heavy cream gradually. Let it simmer for 5-7 minutes until the sauce thickens.
  5. Return the chicken with any juices to the skillet. Add garam masala and simmer for another 8-10 minutes until fully cooked.
  6. Garnish with parsley or cilantro and serve warm with basmati rice or naan.
