Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey and season with salt, pepper, paprika, and thyme. Sauté for 5-7 minutes until browned.
  3. Add diced onion and bell pepper to the skillet and sauté for an additional 5 minutes until softened.
  4. Fold in fresh spinach or kale and allow to wilt for 2-3 minutes.
  5. Combine the turkey-vegetable mixture with cubed sweet potatoes in a large mixing bowl.
  6. Transfer to a greased baking dish and sprinkle cheddar and mozzarella cheese on top.
  7. Bake for 25-30 minutes or until cheese is bubbly and golden brown.
  8. Let sit for a few minutes before serving to enhance flavors.
