Method
 

Preparation Steps
  1. Pat the steak dry with paper towels and season both sides with salt, pepper, garlic powder, and onion powder. Let rest for 15-20 minutes.
  2. In a mixing bowl, whisk together sour cream or Greek yogurt, Dijon mustard, fresh herbs, garlic powder, salt, and pepper until smooth. Cover and refrigerate for at least 10 minutes.
  3. Slice the zucchini into thick rounds, coat with olive oil, salt, and pepper. Preheat grill and grill zucchini slices for 2-3 minutes on each side.
  4. Preheat grill pan or outside grill to high heat. Add olive oil and grill the steak for about 3-4 minutes per side until desired doneness.
  5. Assemble the bowl with a base of rice or mashed potatoes, layer on grilled zucchini and sliced steak, then drizzle the herb sauce over the top.
