Preparation Steps
- Pat the steak dry with paper towels and season both sides with salt, pepper, garlic powder, and onion powder. Let rest for 15-20 minutes.
- In a mixing bowl, whisk together sour cream or Greek yogurt, Dijon mustard, fresh herbs, garlic powder, salt, and pepper until smooth. Cover and refrigerate for at least 10 minutes.
- Slice the zucchini into thick rounds, coat with olive oil, salt, and pepper. Preheat grill and grill zucchini slices for 2-3 minutes on each side.
- Preheat grill pan or outside grill to high heat. Add olive oil and grill the steak for about 3-4 minutes per side until desired doneness.
- Assemble the bowl with a base of rice or mashed potatoes, layer on grilled zucchini and sliced steak, then drizzle the herb sauce over the top.
