  • 8 ounces sliced genoa salami
  • 8 ounces sliced spicy capicola
  • 8 ounces sliced turkey breast
  • 8 ounces sliced mozzarella cheese
  • 1 cup shredded romaine lettuce
  • 1 medium cucumber sliced
  • 1/2 cup sliced black olives
  • 1/4 cup sliced banana peppers
  • 1/4 cup pesto
  • 2 tablespoons red wine vinegar
  • 1 tablespoon balsamic glaze
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Method
 

  1. Begin by preheating your oven to 375°F. Carefully slice the sub rolls in half, ensuring they remain attached at one side to create a pocket.
  2. In a mixing bowl, combine the pesto, red wine vinegar, balsamic glaze, dried basil, salt, and pepper, stirring until well blended.
  3. Generously spread the pesto mixture on the inner sides of each sub roll.
  4. Layer the genoa salami, spicy capicola, and turkey breast on the bottom half of each roll.
  5. Add a generous slice of mozzarella cheese over the meats.
  6. Pile on the shredded romaine lettuce, cucumber slices, black olives, and banana peppers for a fresh crunch.
  7. Carefully fold the sandwich closed and wrap each one snugly in parchment paper.
  8. Place the wrapped sandwiches on a baking sheet and bake in the preheated oven for about 12-18 minutes, or until the cheese is gooey and the sandwich is heated through.
